Another Cheese post: Goat's Milk Mozzarella

Goat's milk mozzarella is one of my favorite cheeses to make.  It was the first cheese recipe I tried as a beginner and I haven't stopped making it since.  It's quite a simple recipe.  I use a variation similar to Ricki Carroll's famous 30-Minute mozzarella. Rather than using a microwave, I use salted hot whey to heat and stretch the mozzarella.  I make this about once a week for Friday night pizza tradition.  It's perfect when the salty gooey cheese melts into the sausuage and gets nice and crusty.
