Charlotte's twins

Sweet-tempered Sweet Land Charlotte kidded twin doelings on May 18, 2016. She was bred to rambunctious buck Capsand Creamery Walker again for her 2nd kidding and like last year, it was an easy birth. Both doelings have hearty appetites & strong sucking reflexes. One has coloring very similar to Charlotte, a light pinkish color; her sister is a flashy tricolor. They are a cute pair! Here they go exploring the plum thicket in the beautiful May sunshine.

Another Cheese post: Goat's Milk Mozzarella

Goat's milk mozzarella is one of my favorite cheeses to make. It was the first cheese recipe I tried as a beginner and I haven't stopped making it since. It's quite a simple recipe. I use a variation similar to Ricki Carroll's famous 30-Minute mozzarella. Rather than using a microwave, I use salted hot whey to heat and stretch the mozzarella. I make this about once a week for Friday night pizza tradition. It's perfect when the salty gooey cheese melts into the sausuage and gets nice and crusty.

Intro

We raise Nigerian Dwarf goats because of their quality: creamy, high butterfat milk, small size, and sweet personalities. They provide our family with a fresh source of raw milk, as well as yoghurt, cheeses, soap, and a variety of dairy products. We love our animals, care for them very well, and are blessed that we are able to raise our own food. Finding the new kids good homes is important to us. Our 12th kidding year will be in 2023, with dairy conformation and gentle temperaments our breeding priorities.
